Obviously there is the contracts board as well as the roster page to go off of, but I came from the GameFAQs thread and I know a lot of people there were reserving (or at least requesting) certain superstars. Are all superstars who haven't "signed a contract" considered still available? If not, it would be very helpful if we had a list of superstars that are taken/reserved. I'm trying to decide who I want to be but I don't know who's available for sure!

If the superstar does not have a contract, then they are available. Everybody on gamefaqs say they are interested, but some of them don't come to the site and register. So they lose their requested superstar.
